Vietnam was originally named Au Lac. Originally meaning Joy and Happiness the name was lost during the wars and fall of dynasties that afflicted the country and eventually changed officially in the 18th century when King Gia Long conquered the entire country. Those that wish to remember the Golden Times use Au Lac as a reminder and I can attest that this restaurant brought me a tremendous amount of joy and happiness with their amazing vegetarian and raw selections.
The spring rolls in any variety leave nothing to be desired. Each dish offers a new treat for the taste buds and nose. I think I might just have to try them all.
The chef, Ito, took a vow of silence and for years, yes years, he quietly prepares the best gourmet vegetarian and raw dishes around, using a note pad to express his words.
Taken over in 1997 by Mai Nguyen, Au Lac says they specialize in Humanese Cuisine, we are all human and Au Lac Restaurant is meant to appeal to everyone and have compassion for everyone and everything, the animals the plants and each other. They seek to entertain your taste buds and open your mind to the idea to the potential of vegetarian and raw food thus helping to promote the vegetarian lifestyle. They’ve done an excellent job.
I went here for my birthday and can’t wait to go back.
